Stuffed chicken breast with cucumbers.

 

INGREDIENTS
2 tbsp chopped dill
4 tbsp dry white wine
3 tbsp. cream 33% fat
parsley

Stuffed chicken breast with cucumbers.

pinch of grated nutmeg
2 large cucumber
2 chicken livers
butter
4 large chicken Breasts without skin and bones
1 chicken fillet
STEP-BY-STEP RECIPE

Step 1
Cucumbers cut in half, remove seeds and cut into thin long strips. Put in a colander, add salt, mix and leave for 1 hour to leak excess juice, then rinse and dry on a paper towel.

Step 2
To make the filling: liver, along with fillet, cream and blanched 1 min in boiling water parsley grind in a blender to a smooth paste. Add pepper to taste and nutmeg.

Step 3
Chicken Breasts lightly beat off, using a sharp knife, make each cut to make a “pocket”. Fill them with the stuffing, secure with toothpicks and fry until tender in half of the butter over high heat under a lid for 4-5 min. on each side.

Step 4
In the second pan fry in remaining butter and cucumbers, 1 min. to remove the Breasts and keep warm. Drain the oil, put the pan back on the fire and pour the wine.

Step 5
Once boiled, place in there the cucumbers, add dill and simmer for another half a minute. Cool and serve with hot Breasts.
