Recipe for Sunday breakfast: fritata with beans, tomatoes and basil

Recipe for Sunday breakfast: fritata with beans, tomatoes and basil

Ingredients:
1 tbsp. olive oil
2 cups of cherry tomatoes
1 cup black or red beans
8 eggs
1 tbsp. Leaves of fresh basil
Salt and pepper
50 grams of mozzarella
Cooking method:
1. Preheat the olive oil in a small frying pan, add the tomatoes and beans cut in half, add salt, pepper to taste and fry for 5 minutes over medium heat.
2. In a small bowl, beat the eggs, basil, salt, pepper.
3. Slowly pour the egg mixture into a frying pan with tomatoes and beans. Add cheese, cover and cook for 15-20 minutes.
