Quick marinated mushrooms!



– 800 gr of fresh mushrooms, cut into quarters (or halves, if the mushrooms are small)
– 16 cups of water + 3 tablespoons 5% vinegar (or juice of 1 lemon)

Quick marinated mushrooms!

For the marinade:
– 1/2 Cup 5% vinegar
2 teaspoons salt
– 1 teaspoon sugar
– 3 cloves of garlic, chopped
– 2-3 Bay leaves
– 1/2 tsp ground black pepper
– 1 sweet red pepper, chopped
– 1 1/2 tbsp chopped dill (fresh or dry)
– 2 cups of water
– 1/2 Cup vegetable oil


1. Marinade:
In a medium saucepan mix the vinegar, salt, sugar, garlic, Bay leaf, ground black pepper, red pepper and dill. Simmer for 5 minutes. Add 2 cups of water, bring to the boil and simmer for another 5 minutes. Add the oil and turn off the heat.
2. Mushrooms:
Boil 16 cups (4 quarts) water with 3 tbsp vinegar (or juice of 1 lemon). Wash the mushrooms, cut into quarters and place in boiling water. Stir, cover and cook for 3 minutes.
3. Drain the mushrooms and fill them with marinade. Cook for another 2-3 minutes in the marinade to cool to room temperature and refrigerate overnight.
