Ingredients for 6 servings:

3 medium carrots
2-3 medium bulbs
200 g of celeriac root
1 tsp. Cumin
1.2 kg of pork ham or scapula in one piece
1 tsp. Dry garlic
1/2 tsp Black ground pepper


3/4 tsp Salt
400 ml of light unfiltered beer

50 g of butter

We chop the onions, carrots and celery. Put it in the form.

Sprinkle with caraway seeds, slightly add salt.

Meat rubbed with a mixture of salt, pepper and garlic. We put in the form for vegetables. We pour in the beer.

We put in the oven preheated to 200 degrees and bake until ready, about 1 hour and 20 minutes. The thermometer should show 80 degrees. In the process of baking, we pour the meat several times with beer from the mold.

Ready meat is removed from the mold, put it on a plate and let it go under the foil for 10 minutes. In the meantime, we shift the vegetables and the remains of beer and meat juices to a saucepan. Grind the blender in a puree. Add the oil and mix.

We serve meat with garnish.
