LATE CELEBRATED CAKE.

 

Ingredients: (per form 18 cm)
For the cake
-mook — 130 g
-soda — 0.5 tsp
-cacao 30 g
-fast brewed coffee — 130 g

LATE CELEBRATED CAKE.

Sugar — 75 g
— sunflower-seed oil — 50 g
Vinegar 9% — 1 tsp.

Preheat the oven to 180C.
In a bowl, pour in coffee, oil, vinegar, add sugar and mix.
In a separate bowl, combine the flour, soda, cocoa. Sift to liquid ingredients. Mix to homogeneity.
Form the baking sheet with a parchment, pour the dough and smooth it (or knock it on the table). Bake for 25-30 minutes.

Souffle:
Agar-agar — 4 g
Cherry juice — 450 g
Semolina — 40 g
Sugar — 75 g
A handful of cherries (can be frozen, pre-defrosted into microwave and squeezed juice)

Prepare a split form beforehand, lining the bottom and sides with a food film (as the agar very quickly freezes).
Pour the agar-agar cherry juice (75 g) and leave for a few hours.
Leave the remaining juice in a small saucepan and put on a fire. Sprinkle sugar and semolina. With continuous stirring, bring to a boil. Reduce heat and cook until thickened (7-10 minutes).
In the meantime, prepare two bowls. In one bowl, pour cold water. Ready porridge pour into a second bowl and put it in a bowl of ice water.
In parallel, put agar-agar on the fire with the juice and bring to a boil, leave for another 1-2 minutes.
At the same time, start whipping the souffle. Gradually switching speeds from minimum to maximum. Mousse will increase in volume and brightens. Gradually, during whipping, pour in the agar and beat for another 1-2 minutes.

Assembly reverse:
Immediately pour the mousse into a mold, lay out on it a prepared cherry. On top carefully put the cake and press, so that the souffle slightly protrudes beyond the edges.

Leave in the refrigerator for 5 hours or overnight.

P.S.
1) Use agar-agar for soufflé, since it is of vegetable origin unlike gelatin.
2) For better taste and flavor, it is better to use packaged juice.
3) for glaze: melt 50 g of bitter chocolate in microwave, pour in 2 tbsp. Sunflower oil and mix to homogeneity
4) for chocolate balls, use trimming from the trimming of the cake. Since the cake is moist, it is easy to form balls from it. In the remaining chocolate glaze add a large chopped hazelnuts. Mix. Evenly check the balls.
