Eggplants in Italian

We take: 3 medium aubergines, 1 kg of ripe tomatoes, 100 g of parmesan and mozzarella, 5 tablespoons. Olive oil, 1 bunch of basil, salt and pepper to taste.

First, cut the tomatoes with rings and put them to stew in the saucepan for 10 minutes. Then cut the eggplants in circles not thicker than 1 cm, salt and let stand for 10 minutes.
In the meantime, prepare the baking dish by oiling it, and slice the basil. Fry the eggplant rings on a semi-dry frying pan, salt them. Salt and pepper the tomatoes.
Lay the layers of eggplants, and tomatoes, alternating between them and sprinkling with basil. Top with Parmesan and put finely chopped mozzarella. Bake in an oven, heated to 180 degrees, for 30 minutes.
