Chocolate orange mousse


1 orange
55 g of cane sugar
½ Vanilla pod

Chocolate orange mousse

200 g dark (70% cocoa) chocolate
80 ml orange juice (approximately 2 oranges)
80 ml water ( room temperature) + 50 ml syrup

To prepare orange syrup. One orange cut into slices, pour 50 ml of water, add sugar and ½ vanilla pod. Cover and cook on low heat for 30 minutes.Remove from heat and strain.
Slowly melt the chocolate over a water bath, remove from heat. Add orange juice 1 tablespoon and thoroughly mixed. Then slowly admixed 80 ml of water, pouring gradually.
Admixed with 55 ml of orange syrup.
Pour into 4 portioned containers and decorate with orange zest. Cooling to room temperature, and then put into the refrigerator for 2-3 hours.
