Carrot cake with apple cream

 

Light and airy apple cream on a juicy carrot – apple – nut basis …. Very tasty and not very harmful for the figure

Dough for the base:
125 g of flour
100 g of brown sugar (can be replaced by conventional sugar)
half a teaspoon of cinnamon
small pinch of salt

Carrot cake with apple cream

1 sachet (16 g.) Of vanilla sugar
1 teaspoon (without top) of baking powder
1 egg
100 ml. vegetable oil odorless
2 medium carrots
1 medium apple
100 g of walnuts

Cream:
400 g of apple puree (a ready-made product or you can make yourself – peeled and cut apples fill with sugar, cook until soft and smooth)
250 g. Ricotta (can be replaced with pasty cottage cheese)
200 g of cream 30% fat content
9 g of granulated gelatin or 6 plates
100 ml. apple juice or water

This cake I baked in a separable shape with a diameter of 26 cm. It turned out not very high – in finished form, 3.5 cm in height. If you want higher, you need to take a smaller diameter accordingly.
For the test, sift the flour and mix it with sugar, baking powder, salt, cinnamon and vanilla sugar. Carrot and apple peel from the peel and seeds and rub on grater: apple – on a large, and carrots – on a fine. Nuts chop into pieces. Egg whisk with a mixer with oil, add the flour mixture and mix with a wooden spoon. Add carrots, apples, nuts and mix well again. Cover the bottom of the form with baking paper, apply oil on the walls. Put the dough in a mold and smooth it. Bake in a preheated oven at 180 ° C for 30 minutes. Ready the cake to cool completely.

For cream, soak gelatin in water according to the instructions. Stir the apple puree with ricotta mixer (not for long). Try to taste, maybe you will want to add sugar … Apple juice heat, but do not boil. Dissolve prepared gelatin in it and add to apple puree. Whip the cooled cream into a strong mass and mix it with apple cream gently with a shovel from below – upwards.

Fasten the ring from the form or special confectionery ring around the cooled cake and lay the apple cream on top. Align and place in the refrigerator to freeze for an hour or three … After hardening, remove the ring and decorate the cake at your discretion. I decorated with almond leaves and cranberry jelly.
