Cake with hazelnut meringue

 

Ingredients for cake
For the walnut cake you will need:
protein – 120g (3-4 eggs)
sugar powder – 30 g

Cake with hazelnut meringue

flour – 27 g
nuts (hazelnuts) — 90 g
sugar – 110 g
vanilla sugar – 1 tsp

For sponge cakes you will need:
protein – 220 g (6-7 eggs)
sugar powder – 150 g
flour – 105 g
salt – ¼ tsp
citric acid — 0,5 tsp
soda – ¼ tsp
vanilla sugar — 0.5 tsp.

For the cream will need:
4 egg yolks
520 ml of milk
160 g sugar (or to taste)
65 g starch
200 g of CL. oil at room temperature.
