Ingredients:
Ready-made puff pastry — 500 g (2 leaves)
Mascarpone cheese 250 g
Cheese cream cheese (I have Arla) — 150 g

Cream at least 30% fat (I have 38% Valio) — 250 ml
Powdered sugar — 3 tbsp. Spoons
Powdered sugar with vanilla — 1 tbsp. With a slide
Cherry jam (syrup) — 3-4 st. Spoons
20 prunes berries
1 orange
Brown sugar Demerara — 5 tbsp. Spoons
4 tbsp. Spoons of cognac or black tea
Liqueur Amaretto or Cointreau (optional) — 1 tbsp.

Preparation:
The basis:
I took a shape with a diameter of 20 cm. Sheets of dough a little roll out and cut in the form of a circle, along the radius of the detachable shape, where the cake will be collected.
Bake on a sheet covered with parchment at 180-190 g. Until light browning, an average of half an hour. I bake 2 cakes at 2 levels in convection mode. Prepare the layers a little in the extinguished oven, so that the dough does not opal.

We prepare the fruit filling in advance. 20 berries prunes, washed and dried, cut into pieces and soaked in 4 tablespoons. Cognac or in black tea, cover the dishes with a lid and leave for at least an hour.

While the layers are baked and cool, prepare the cream.

Mascarpone and curd cheese get from the refrigerator and hold for half an hour at room temperature. We rub mascarpone with sugar powder, add curd cheese, can spoon a liqueur

Amaretto splash, whisk with a spoon until smooth. (I add the powder gradually and try it so that it is not too luscious).

Whisk the cream into a dense mass with 1 tbsp. Sugar powder with vanilla with a mixer, gradually pour in cherry syrup. Cream cream should be very dense.

Add it to the cheese mass, mix until smooth, add the berries from the jam (a couple of tablespoons is enough).

The orange is disassembled into slices, we cut them with plates of 0.7 cm, roll in the brown Demerara sugar and leave it uncovered for 40 minutes. Orange will give a little juice, soak up the sugar and it will be very tasty and without heat treatment.

We collect the cake:
I divide each cake into two parts, because I love strongly soaked cream layers, in total 4 dough cakes are obtained.

The cream is divided into 4 parts — three more and one smaller for lubricating the top. We split the form with a parchment, we lay out the first cake, we cover the parchment along the sides, so that the edges of the cake are flat, and the cream fills all voids.

Lightly lubricate the cake with cream, spread half the prunes. Then 1/3 of the cream, cover with a second crust and lightly press down.

We used one sheet of dough. Spread 1/3 of the cream (without prunes). We start to spread out the second baked sheet, divided into two parts. The procedure is the same — a little cream, then the second half of the prune, put out 1/3 of the cream — and cover with the last crust. The last cake should be laid out with the underside, the one that touched the sheet when baking — it is even. Lubricate the surface with the left cream.

Sprinkle the top and sides of the cake with crumbs from the cakes (we had 8 baked corners). We put out slices of oranges in sugar.

We put the cake in the fridge, preferably at night, so that it is soaked properly.
